Kolaches: A Southern Tradition

The kolache, a beloved pastry in Texas, traces its origins to Central Europe, particularly the Czech Republic. Immigrants brought this traditional treat to Texas in the late 19th century, where it quickly found a new home and adapted to local tastes. Originally a sweet pastry filled with fruit preserves or poppy seeds, the Texas kolache evolved to include savory fillings like sausage and cheese, earning the nickname “pigs in a blanket.” These savory variations are also known as klobasnek, derived from the Czech word “klobása” for sausage. Today, kolaches and klobasneks can be found in numerous bakeries, cafes, and specialty shops across Texas. Popular locations include West, Texas—a town celebrated for its Czech heritage and authentic kolaches—and other towns like La Grange, El Campo, Fredricksburge, and New Braunfels, where bakeries offer a variety of traditional and innovative flavors to cater to locals and tourists alike.
